Masala Eggs (Egg Bhurji)

Okay this is perhaps the most basic recipe I’ve ever posted but its so easy to make, packed with flavor, and you really can’t go wrong with eggs!  Masala Eggs (egg bhurji or Indian scrambled eggs) is something I can never get enough of and is top most on my meal prep list. Love eating this rolled up in a warm tortilla with some cheese and pickled onions, so yummy!

I used eggs (of course), fresh roma tomatoes, red onions, ginger, garlic, hot green chilies (jalapeños will work as well) and spices.

Break the eggs in a bowl and add spices – turmeric, paprika, ground coriander seeds and salt. Whisk the eggs and spices, I prefer this over adding spices while cooking as the spices get mixed well with the eggs.

Heat ghee in a skillet over medium heat; add onions, green chilies, ginger-garlic paste, and cook for 5 minutes. Once the onions are soft add chopped tomatoes and cook for another 5-10 minutes.

Then add the masala whisked eggs, cook and stir until the eggs are scrambled for about 5 minutes. 

Sprinkle some garam masala and chopped cilantro to finish, that’s it! Serve with toast, I like to eat masala eggs with a warm tortilla, on a bed of lemony kale and topped with some cheese and pickled onions…so good and easy! This is also a great make ahead breakfast for busy weekday mornings.

Ingredients
  1. 6 Eggs
  2. 1/4 Tsp Turmeric
  3. 1 Tbsp Coriander Powder
  4. 1.5 Tsp Cayenne Pepper
  5. 1/4 Tsp Garam Masala
  6. Salt to Taste
  7. 1 Tbsp Ghee
  8. 2 Roma Tomatoes - chopped
  9. 1 Medium Red Onion - chopped
  10. 1 Tbsp Ginger and Garlic paste
  11. 3-4 Green Chilies - chopped
  12. 1/4 Cup Cilantro - chopped
Instructions
  1. In a bowl, crack the eggs and whisk with salt, all spices except for garam masala.
  2. Heat ghee in a skillet and add onions, chillies, ginger and garlic paste.
  3. Cook over a medium heat for about five minutes until soft.
  4. Add the tomatoes, a pinch of salt and cover.
  5. Fry for about five minutes until thick the onions and tomatoes are cooked.
  6. Pour in the egg mixture and stir, scraping it from around the edges as it sets.
  7. Continue to stir and scramble the eggs.
  8. Stir in the chopped coriander and garam masala.
