Oh I love me a good spicy coconut chutney, and this chutney is made from good fats – coconut and cashews! I was never a huge fan of anything coconut when I was growing up, not sure what changed but I dig everything coconut now – I use it to make granola, cookies, smoothies, in salads, the list is endless.
This chutney is so basic and packed with flavor, its made using – raw cashews, cilantro, fresh or frozen coconut, hot green chilies, garlic, salt and lime juice.
I typically spread the chutney over savory pancakes, mung-bean crepes, sweet potato toast or use it as a dip for tortilla and plantain chips! I recently tried this chutney with garlicky tostones…so yummy!
Coconut Cashew Dip (Chutney)

Ingredients
- 1/2 Cup Fresh Coconut Chunks (or grated frozen coconut)
- 1/4 Cup Raw Cashews
- 1/2 Cup Cilantro
- 1 Clove Garlic
- 3-4 Green Chilies
- 2 Tbsp Lime Juice
- Salt to taste
- 1/8 Cup Water
Instructions
- In a food processor, first add the coconut, cashews and pulse for 1 minute.
- Then add the remaining ingredients except for water and blend into a smooth consistency.
- Store in a glass jar and refrigerate for up to a five days.
Notes
- Add more hot green chilies to make the chutney spicy.
- Add more water if required.
